Executive Chef Sean Ellis began his culinary career in 1995 as a kitchen hand at Est Est Est, a large fine dining Italian restaurant in Leeds, West Yorkshire, England. By observing the talented Chefs and day to day operations of the kitchen; he knew immediately he had a passion for the culinary arts and he started his apprenticeship in 1996 at Rathbone College. He successfully completed his City and Guilds NVQ in 1999.
While honing his skills at both the Queens Hotel and The Olive in Leeds; he soon decided to try his fortune back in his home town of Calgary, Alberta Canada. He worked for 2 years at the award winning Owl’s Nest Dining Room at The Westin as a Chef de partie. While at The Westin; Sean had the opportunity to learn Banquet operations, he catered private offsite events, and collaborated with other areas of the hotel to deliver wonderful and memorable guest experiences. However, Sean’s passion for England was too strong and in 2002 he returned.
The 5 star Sheraton Park Lane Hotel in Piccadilly and Simply Heathcotes (a Michelin Star restaurant) witnessed Sean rise quickly through the culinary ranks and further fueled his desire to learn and adopt new, cutting edge cuisine.
On the move again and finding himself back in Calgary in 2005; Sean returned to The Westin. It was no accident that in only a few short years, Sean’s passion, culinary expertise, and approachable leadership style enabled him to be hired as Executive Chef.
Now Chef Ellis begins his newest culinary journey as he brings his gastronomic expertise and excellence to Toronto as Executive Chef at the world class Sheraton Centre Toronto Hotel.
